Yes, you can buy a vegan butter in store. But usually it contains palm oil, which is not really good for the environment and also for your health. And you can buy it only in plastic, or other packaging. And since I started to live mostly zero waste, I developed a healthy, raw vegan butter recipe, for which you can buy ingredients also in a bulk, and make it completly zero waste <3 And, it tastes very nice, it is nicely smooth and is wonderfully melting in your mouth. Just imagine – freshly baked, crunchy baguette, with this delicous vegan butter!
100g of cashew nuts ( let them soak in a water, at least for 5 hours )
60g of coconut oil, melted
60ml of plant based milk (the best is homemade)
3 Tbsp of rapeseed oil (a good quality one, the best is organic)
1/2 Tsp of nutritional yeast
1/2 Tsp of salt
a pinch of turmeric for the colour (optional)
Let´s get started!
Put into a blender all the liquid ingredients. Wash the soaked cashews and add them into the blender. Add the salt, nutritional yeast and turmeric, then blend until smooth and creamy. It can take a while, so be patient. Pour the mixture into a bowl, glass or another container and let it chill in the fridge. The consistence will be exactly like butter, after a couple of hours in the fridge. Now is the time, when you spread the butter, nicely thick on your freshly baked bread, put some fresh herbs on the top and sprinkle with some pepper… And enjoy it!
