Carrot cake bites with white chocolate

A perfect little dessert after a big meal. This year I decided to make these bites for Easter, not only because carrots are typical for Easter. But while everywhere is a lot of food and everyone is full, carrot cake bites are just a perfectly sized dessert. Lets try them with vegan white chocolate and pistachios!

For the dough: 
-> use a 250ml mug
1 mug of flour (I use spelt whole grain flour)
3/4 mug of brown sugar
1/3 mug of oil
2 Tsp of cinnamon
2 Tbsp of vanilla sugar
1 pinch of salt
1 Tsp of baking powder
1/2 mug of ground almonds
300g of grated carrots
1/2 mug of water

For the finishing:
2 Tbsp. of plant based milk
2 Tbsp. of plant based yoghurt
80g of vegan white chocolate
choped pistachios

Let`s get started!
Put all the ingredients in a bowl and mix them well. Put the dough into a greased baking pan and bake it 30 minutes at 180°C. Then, take a wooden skewer and look, if the dough is already baked. If not, bake it another 10 minutes and try again. Let the dough cool down. Mince the dough with your fingers into very little crumbs and add the yoghurt and milk.
Now comes the fun part! Knead the minced dough with the other ingredients into a formable mass with your hands (that´s the best way to do it). If the mass is too dry, add a bit of milk. Then form the balls! Afterwards it’s time to melt the chocolate. The best is to do it in a water bath. Put a bit of melted chocolate and a pinch of pistachios on each ball. Let them chill in the fridge!
