Blueberry-lemon cream

Wanna eat something creamy, cheesy, sweet, fresh? White tofu can help you! This secret ingredient makes creamy and cheesy konsistency. Works great in combination with lemon juice and zest. And also berries! I love to add some blueberries, because they are very healthy, tasty and cause my freezer is still full of them since the last summer.

200g of white tofu
1 hand full of blueberries – fresh or frozen
grated zest from one lemon
1 Tbsp. of lemon juice
1 banana
agave or maple syrup to taste

Let´s get started!
Cut the tofu and banana in small pieces and put them into a blender. Add the lemon juice, zest, blueberries and add a litle bit of water. Blend until smooth and creamy. Try the taste and add syrup if needed. Serve with fruits, cereals, nuts… Or use as a topping for cakes, cupcakes…
